Automate as much of your job as you can (if you can) and tell no one.
Exactly this happens to me some months ago. A colleague should have fixed a logistics issue, but he got sick and they struggled to find a replacement for him until they stumbled over me. I fixed it and now it is my responsibility.

This has happened to me. I'm the "Acting" Coordinator because my boss left and they handed me her workload without additional pay. In fact my hours are reduced because of lost grant money due to"DEI" language being in the grant.
I'm in hell.
