Depends on the scene it's being shot for. A rainbow could absolutely fuck up the mood you're going for. The sky in big budget movies is almost always changed in post anyway now because cg sky is easy and holding up production for a rainbow is expensive. I'd be more concerned about burning daylight to wait out a rainbow that can be fixed later. I'm pretty familiar with The Odyssey and can guess the broad strokes Nolan is gonna paint with cause he's Nolan, I'm gonna guess a rainbow in the background would be really distracting
Just have the post/vfx house mask over the rainbow?? The post house is probably replacing a lot of background stuff already. This feels like the world’s worst lie.

Depends om the mood the shot is trying to convey. Just cause it would look pretty doesnt mean it's right for the scene. Also rainbows tend to go away and you dont want a rainbow in some shots and not in others. It's a shot for a movie and rainbows are distracting and tend to be associated with light heartedness and or hope. If you dont want your scene to convey that, its generally good to not have a visual reflection of it
